WThis is a simplified take on a drink found on a new menu. This is a party-sized pre-mixed which is packed with flavours associated with festive period, rendering it ideal for a celebration. Reserve the remaining cordial to use in morning drinks, puddings, or for another batch of the drink.

Makes enough for 10 servings
To make the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
For the Syrup: Combine every items into a saucepan, heat until it reaches a gentle boil, stirring to dissolve. Then, turn off the stove allowing it to cool fully. Transfer into an sealable bottle, seal keeping it in the refrigerator, it can be stored for up to one month.
Preparing the Premix: Mix the specified liquid ingredients in a large bottle, let it rest for one hour, then pass it through , ideally through cheesecloth, making it perfectly clear.
To serve: Measure 85ml of your premix into a stirring glass filled with ice, and stir carefully for about 60 seconds to chill. Pour into an frosted cocktail glass or equivalent, decorate with some cranberries and finish by giving it a brief mist of the essential oil over the top.
